Yogurt-Dijon Salad Dressing

plain nonfat yogurt

Dijon mustard

Juice, of 1/2 lime

Pinch, of sugar

Salt, and pepper

One, 15 oz. can whole beets

1/2

cup

grape tomatoes

scallions, finely sliced

extra-virgin olive oil

Lettuce, leaves

Mix the yogurt, mustard, lime juice, and sugar; season with salt and pepper. Cut beets and tomatoes crosswise and toss with scallions, olive oil, salt, and pepper. Line a platter with lettuce, top with beet salad, and drizzle with yogurt dressing.
