thick slices double-smoked bacon, cooked until crisp

Prepare Pimiento Cheese: Using a fork, stir together the mayonnaise, salt, pepper, and cayenne in a large bowl. Add the cheddars and peppers; mix until combined. Cover and refrigerate 30 minutes to allow flavors to meld.

Prepare Basic Burgers (see recipe below left). During the last 30 seconds of grilling, top each burger with a few spoonfuls of the Pimiento Cheese, tent with foil, and cook until the cheese melts.

Place each burger on a bun, top cheese with 2 slices of bacon, then finish with top bun.
