Oven Dried Tomatoes

Fresh Thyme, or 1 tsp Dried Thyme

doz. Ripe Plum Tomatoes

Extra, Virgin Olive Oil

Pre-heat oven to 250. Mix dry ingredients together. Cut Tomatoes in

half, lenghthwise, and place on cookie sheet. Brush w/ Olive Oil and

sprinkle w/ spices, etc. Bake at 250 for two hours. If you have an

4

electric oven, turn it to warm and leave overnight. If you have a gas

5

oven with a pilot light, just leave them overnight. In muggy months

6

it may take a bit longer to get the right consistancy. Store in Glass

7

or Plastic container with a good seal, covered w/ Olive Oil and

8

refregerate. They will keep for a few weeks.

Note: I like a little more sugar and a little less salt. Also, I

10

make more of this mixture and reserve some to add to the Olive Oil I

11

cover them with.
