Slab Bacon, cut in 1/2 inch dice

Red Bell Pepper, cut in 1/4 inch dice

Green Bell Pepper, cut in 1/4 inch dice

Baked Ham, cut in 1/4 inch dice

Anchovies, cut in 1/4 inch dice

can Plum Tomatoes, (28oz), drained and chopped (reserve juices)

Apples, peeled and cut in 1-inch cubes

Instructions:

Bring Beans to a boil, cook for 1 minute, cover closely and let

stand for 1 hour. Drain and reserve.

Preheat oven to 350. Meanwhile, place Bacon in an ovenproof pot

and cook over low heat until just rendered. Remove Bacon with slotted

6

spoon; set aside. Add onion to pot; cook 10 minutes. Add peppers;

cook 5 minutes more. Add reserved Beans and Bacon, plus all remaining

8

ingredients except apples and reserved tomato juices; combine.

Cover pot; bake in oven for 2 hours. Add Apples and 1/2 cup

10

tomato juices; bake, uncovered, for another 2 hours. Serve hot.
