Jim Cohen's Passover Chocolate Citrus Nut Cake

zest, of 1 lemon

zest, of 1 orange

Using a 9-inch spring form mold, line the bottom with aluminum foil.

Grease the sides and

Bottom. Heat the oven to 350 degrees F.

Measure 1 cup of sugar, divide it in half, reserve ½ cup for beating egg

5

whites. Take the other

6

cup and divide it in half again. Combine all of the nuts and ¼ cup sugar

7

in the bowl of a

8

Cuisinart. Grind the nuts by pulsing on and off until they are like large

9

grains of sand. Set nuts

aside. Chop chocolate into pieces and place in bowl of Cuisinart, add ¼ cup

11

sugar. Pulse on and

12

off to grind. Set chocolate aside.

Zest lemon and orange and chop into tiny pieces.

Separate the egg whites from the egg yolks. Place the yolks in a large

15

mixing bowl. Place the

whites in the bowl of an electric mixer.

Whip the egg yolks until they are pale yellow. Stir in chocolate and

18

zest.

Whip the egg whites slowly adding remaining ½ cup sugar, until soft peaks

20

form. Alternately

fold egg whites and ground nuts into egg yolk and chocolate mixture,

22

starting with egg whites.

Pour mixture into prepared pan. Place in middle of hot oven and bake for

24

-30 minutes.

Cool on cooling rack, remove from mold. Finish with powdered sugar and

grilled oranges or

other sliced fruit.
