Fiddle Headís espresso barbecue sauce

Fiddle Heads uses this recipe for grilling whole pork tenderloin, but you can also use it for your favorite barbecue meat.

32-ounce bottles of ketchup

medium

sweet onion, finely

tablespoons

garlic chopped

oil

cup

packed brown sugar

tablespoons

espresso powder dissolved in 2 cups water

In a deep saucepan, sautť the onion and garlic in the oil until tender. Add brown sugar and cook on medium heat for 5 minutes. Add ketchup and espresso mixture, stirring well. Cook for 30 to 40 minutes on low, just simmering. Use immediately, or cool and store in tight container for up to 1 month in refrigerator.
