Cilantro Chile Slaw

finely shredded green cabbage

finely shredded red cabbage

diced roasted, seeded and peeled Anaheim chilies

diced scallions

tomatoes diced

cilantro leaves

ounces fresh lime juice

fresh crushed garlic

mayonnaise

Salt, and freshly ground pepper

Toss the 2 cabbages, chilies, scallions and tomatoes together.

Puree the cilantro leaves with the lime juice and garlic, add

the mayonnaise to blend together. Pour that dressing over the

slaw, mixing well and season with salt and pepper.
