fresh breadcrumbs, (two or three slices of sandwich bread, spun up in a food proces

grated cheese, (real cheese, not the stuff in a can.) I prefer pecorino romano

onion, finely minced (or 2 tsp granulated onion)

cloves garlic finely minced, (a garlic press is fine) or 1/2 tsp granulated garlic

Soak the bread in the milk. Add the remaining ingredients to a bowl. Squeeze the bread to get rid of most of the and mix with your hands until thoroughly combined. Shape into balls and fry gently in olive oil until browned. Finish cooking in sauce, or freeze.
